Almond Butter and Jam Stuffed French Toast

This stuffed french toast is full of flavour. It's a must try!

 
 

Ingredients

Recipe serves 1-2

  • 2 tbsp coconut oil

  • 1 egg

  • 2 tbsp unsweetened almond milk

  • 1/4 tsp vanilla extract

  • 1/4 tsp cinnamon

  • 2 slices of sprouted sesame sunflower bread (use any bread of your choice)

  • 1 tbsp smooth almond butter

  • 1 tbsp homemade apricot jam (or any jam of your choice)

  • toppings - 1/2 banana sliced, 1/4 cup crushed almonds, maple syrup

 

Preparation


In a wide bowl, add egg, almond milk, vanilla extract, and cinnamon. Whisk until combined, set aside.


Make a sandwich with the almond butter and jam. Place the sandwich into the egg mixture, flipping to soak both sides, until fully absorbed.


Heat the coconut oil in a non-stick pan on medium heat. Add the french toast to the pan. Cook for a couple of minutes, flip over and cook a few minutes longer until french toast is golden brown.


Top with bananas, almonds and maple syrup or any toppings you prefer.
