Avocado Toast

This healthy gluten-free toast is great for breakfast or lunch and is packed with healthy fats, protein, fibre and heart-healthy omega-3.

 
 

Ingredients

Recipe serves 2
  • 1 avocado, mashed

  • 2 slices sourdough bread, toasted (gluten-free)

  • 2 tsp lemon juice

  • 2 tsp ground flax seed

  • 2 tsp hemp hearts, plus extra

  • 1/2 cup broccoli microgreens

  • 1/4 cup pickled radishes

  • 2 hard-boiled organic eggs, sliced (optional)

  • seasonings- 2 pinches each of salt, black pepper, chilli flakes, paprika

 

Preparation


In a small bowl, add the avocado, lemon juice, flax seed, hemp hearts, and seasonings. Mix well.


Spread the avocado mixture between the two slices of toast. Add egg, microgreens, and radishes. I like to sprinkle extra hemp hearts over the top.
