This healthy gluten-free toast is great for breakfast or lunch and is packed with healthy fats, protein, fibre and heart-healthy omega-3.
Ingredients

1 avocado, mashed
2 slices sourdough bread, toasted (gluten-free)
2 tsp lemon juice
2 tsp ground flax seed
2 tsp hemp hearts, plus extra
1/2 cup broccoli microgreens
1/4 cup pickled radishes
2 hard-boiled organic eggs, sliced (optional)
seasonings- 2 pinches each of salt, black pepper, chilli flakes, paprika
Preparation
In a small bowl, add the avocado, lemon juice, flax seed, hemp hearts, and seasonings. Mix well.
Spread the avocado mixture between the two slices of toast. Add egg, microgreens, and radishes. I like to sprinkle extra hemp hearts over the top.
