Banana Oat Pancakes

I made my healthy dairy free, gluten free pancakes for Shrove Tuesday this morning.

 
 

Ingredients

Recipe makes 9 pancakes

  • coconut oil spray

  • 2 bananas, mashed

  • 2 cups sprouted rolled oats

  • 1/3 cup cocoa nibs

  • 1 tbsp almond butter

  • pinch of salt

  • 1 tsp cinnamon

  • 1/4 cup melted coconut oil

  • 1/4 cup almond milk

  • 1 tsp vanilla extract

  • toppings - sliced banana, cocoa nibs, sliced almonds, maple syrup

 

Preparation


Heat a griddle pan on medium heat.


Add all ingredients, except the coconut spray, to a medium-size bowl and mix until all ingredients are well combined. Let rest for 10 minutes to allow the oats to soften.


Spray the griddle pan with coconut oil. Using an ice-cream scooper, scoop the pancakes onto the griddle, flatten the pancakes with the back of the scooper. Cook 2 - 4 minutes per side or until golden brown. Add toppings of your choice.
