Beets and Yogurt (dairy-free)

This beet salad is so fresh and tasty. You can enjoy it on it's own or as a side dish. Beets have numerous health benefits. They are rich in essential nutrients, and high in fibre...the list goes on. They are definitely considered a "superfood".

 
 

Ingredients

Recipe serves 2 - 4

  • 4 cooked beets cut into quarters ( I used ready to eat cooked beets )

  • 3/4 cups of unsweetened coconut yogurt (dairy-free)

  • 3 tsp maple syrup

  • 1 tsp lemon juice, freshly squeezed

  • salt

  • balsamic glaze

  • 1/4 cup sliced almonds

  • fresh mint, chopped

  • 1 tsp grated lemon zest

 

Preparation


In a small bowl, add yogurt, syrup, lemon juice and a pinch of salt. Stir until ingredients are fully combined.


Pour yogurt sauce onto a plate. Place the beets over the sauce and drizzle them with the balsamic glaze.


Sprinkle the almonds, a pinch of salt, and fresh mint and lemon zest overtop the beets.
