Berry Cherry Summer Salad

I love a refreshing fruit salad in the summer! Enjoy this salad alone or topped with coconut whipped cream or dairy-free yogurt. Give it a try!

 
 

Ingredients

Recipe serves 6-8


Ingredients for the salad

  • 1 (6 oz) pack blueberries

  • 1 (6 oz) pack blackberries

  • 1 (16 oz) pint strawberries, sliced into quarters (after soaking)

  • 1 (6 oz) pack raspberries

  • 2 cups cherries, pitted and halved (after soaking)

  • 1 tbsp baking soda

  • 1/4 cup, plus 1 tbsp white vinegar

  • cold water


Ingredients for the dressing

  • 2 tbsp fresh mint, finely chopped

  • 2 tsp vanilla extract

  • 1 small lemon, juiced and zested

  • 1 1/2 tbsp raw honey

  • 1 pinch salt

  • 1 tbsp hemp hearts

 
Washing the Berries

In a large bowl, add the blueberries, blackberries, strawberries, baking soda, and 1/4 cup of vinegar. Add enough water to cover the berries. Stir the berries and allow them to soak for 10 minutes so that the mixture can clean and remove any possible pesticides.


In a smaller bowl, add the raspberries and cherries, and add the tablespoon of white vinegar and water to cover the fruit. Allow to soak for only 5 minutes to prevent the raspberries from breaking and becoming mushy.


Drain and rinse the fruit with cold water in a colander. Pit and slice the cherries and strawberries.

 

Preparation


In a large bowl, add all the fruit and set aside.


Add all the ingredients for the dressing to a mason jar, secure with the lid, and shake well to combine.


Pour the dressing over the fruit salad and gently mix to combine all the flavours.


Sprinkle the hemp hearts over the top.


Chill the salad in the refrigerator. The refreshing taste is best enjoyed when served cold.
