Berry, Mint Smoothie Bowl

I love a good smoothie bowl, and this one was just that! The fresh mint adds a refreshing flavour and is so good for digestion!

 
 

Ingredients

Recipe makes 2 bowls

  • 1 cup frozen wild blueberries

  • 1 cup frozen strawberries

  • 1/2 cup frozen banana

  • 1 tsp vanilla extract

  • 1/2 cup canned coconut milk (I use Cha's organic brand)

  • 1 tbsp maple syrup

  • 2 tbsp fresh mint

  • Toppings - shredded coconut, cacao nibs, granola, crushed almonds, frozen blueberries (you may use any toppings of your choice)

 

Preparation


In a blender, add all the ingredients except the toppings and blend until smooth and thick.


Divide into two bowls, finish with toppings.
