I love a good smoothie bowl, and this one was just that! The fresh mint adds a refreshing flavour and is so good for digestion!
Ingredients
Recipe makes 2 bowls
1 cup frozen wild blueberries
1 cup frozen strawberries
1/2 cup frozen banana
1 tsp vanilla extract
1/2 cup canned coconut milk (I use Cha's organic brand)
1 tbsp maple syrup
2 tbsp fresh mint
Toppings - shredded coconut, cacao nibs, granola, crushed almonds, frozen blueberries (you may use any toppings of your choice)
Preparation
In a blender, add all the ingredients except the toppings and blend until smooth and thick.
Divide into two bowls, finish with toppings.
