My baked oatmeal is dairy and gluten-free. This healthy recipe is so simple to make. Enjoy it anytime of the day!
Ingredients
Recipe serves 6-8
2 cups sprouted rolled oats (gluten-free)
2 ripe bananas, mashed
1 1/2 cups unsweetened almond milk
1 tbsp chia seeds
2 tbsp flax seeds
1/4 cup shredded coconut
1/4 cup cacao nibs
1/2 cup sprouted almonds, crushed
2 tbsp almond butter
1/2 tsp cinnamon
1/2 tsp vanilla extract
2 tbsp maple syrup
1 cup frozen wild blueberries
vanilla oat ice cream (dairy-free, I use Oat and Mill vegan ice cream brand)
Preparation
Preheat oven to 375ºF.
In a 8 x 8 " baking dish, add all ingredients except the blueberries.
Mix all ingredients very well to combine, then fold in the blueberries.
Bake for 25-30 minutes until set.
Serve warm with dairy-free ice cream or dairy-free yogurt.
