Cauliflower Flatbread

This gluten-free cauliflower flatbread is delicious and so versatile. You can prepare it as a pizza crust and top it with your favorite toppings, or slice it up and make sandwiches or just enjoy it on its own.

 
 

Ingredients

Makes 1 flatbread

  • 1 large cauliflower, stem removed, grated finely with a box grater or in a food processor

  • 3 eggs

  • 3/4 cups almond flour or meal

  • 1/2 cup grated parmesan cheese

  • 1 1/2 tsp salt, 1 tsp black pepper, 1 tsp garlic powder

  • olive oil, for brushing

 

Preparation


Preheat oven to 425ºF. Line a large sheet pan of your choice with parchment paper ( i used a large round pizza pan) and set it aside.

If using a food processor- In small batches, place cauliflower in the food processor and process until finely chopped.


Transfer cauliflower to a large bowl and add all remaining ingredients. Mix well to combine.


Add mixture to the centre of the sheet pan. I like to wet my hands slightly and press while spreading the cauliflower dough out evenly to the edge of the pan.


Bake flatbread for 30-40 minutes or until firm and golden. Remove it from the oven and brush it with olive oil.


You may use this dough as a crust for a pizza - if so, bake the flatbread for 20 minutes, remove from oven, add desired toppings and allow it to bake an additional 15-20 minutes.

I also like to slice it into rectangles and make a sandwich using my green falafel recipe.

Note- If you are using it as a pizza crust, I recommend going light on the tomato sauce to avoid a soggy crust.
