Cauliflower Mash

My dairy-free cauliflower mash is surely a crowd pleaser. It's a simple side dish to add to any meal as shown in my halibut recipe!

 
 

Ingredients

Serves 2-4 people

  • 1 cauliflower head, roughly chopped and rinsed

  • 2 large garlic cloves, peeled

  • 1/4 cup nutritional yeast

  • 2 tbsp vegan butter

  • 1/4 cup unsweetened coconut milk

  • spices - 1/2 tsp salt plus extra, 1/4 tsp each black pepper, garlic powder

  • olive oil

 

Preparation


In a medium pot, add water and bring to a boil on high heat.


Add 1 tbsp of salt, cauliflower, and garlic cloves to the boiling water. Allow to cook for approximately 10-12 minutes or until the florets are soft enough that when the stem is pricked with a knife, it slides off with no hesitation.


Drain the cauliflower and garlic well and place them back in the pot.


Mash the cauliflower and garlic with a potato masher or food processor for a smooth consistency. Add the nutritional yeast and stir to combine.


In a small pot, melt the butter on low heat. Add the coconut milk and spices.


When the butter mixture comes to a soft boil, remove it from heat and stir it into the cauliflower mixture until it is well combined.


Taste for seasoning and add salt if needed. I like to drizzle a touch of olive oil over the top before serving.
