These cauliflower steaks are a vegetarian delight!
Ingredients
Recipe serves 3 - 4
1 whole cauliflower, stems removed and core trimmed
olive oil
spices for veggies - salt, pepper, smoked paprika
4 garlic cloves, peeled
Apero vine tomatoes
herbs - 1/2 cup finely chopped basil, oregano, and parsley combined
spices for herbs - salt, black pepper, chilli flakes, to taste
1/4 cup hemp hearts
1/2 a lemon
Preparation
Preheat oven to 400ºF. Line a large sheet pan with parchment paper. Set aside.
Slice the cauliflower into 2" thick slices, keeping the core intact. A non-serrated large knife works best. You will have some florets that will fall apart, I add them to the pan to bake as well.
Gently place cauliflower steaks, tomatoes on the vine, and garlic cloves onto the pan. Generously drizzle olive oil over all the vegetables. Season with spices. Bake for 25 minutes or until a knife inserted into the cauliflower stem slides out easily.
In the meantime, prepare the herb mixture. In a small pan, add 1 tbsp olive oil. Add herbs and spices. Sauté on low heat for a few minutes or until herbs are softened. Turn heat off and set aside.
When vegetables are done baking, remove them from the oven. Take the garlic cloves and add them to the pan with the herbs. Mix soft garlic into the herb mixture. Take the herbs and spread them over each cauliflower steak. Then take the vine tomatoes and place them overtop the steaks as well.
Sprinkle the hemp hearts all over and freshly squeezed lemon juice.
