My salad with almond sesame dressing is so good and packed with flavour!
Ingredients
Recipe serves 4
Ingredients for the salad
2 heads of romaine lettuce, washed, drained and chopped
1 cup shredded coleslaw mix
1 small cucumber, peeled and sliced
2 scallions, sliced
1/2 cup sprouted almonds, chopped
1/2 cup crunchy salad noodles
Ingredients for dressing
3 tbsp almond butter
1/4 cup coconut nectar (soya sauce alternative)
3 tbsp maple syrup
1/4 cup lemon juice, freshly squeezed
1 tbsp sesame oil
1 tbsp water
2 tbsp sesame seeds
Preparation
In a large bowl, add all the salad ingredients and set aside.
In a small pot, add all the ingredients for the sesame dressing and simmer on low heat, stirring with a whisk. Simmer for 2-3 minutes until you have a smooth dressing
Drizzle the dressing over the salad and mix until well combined
