This dairy-free casserole recipe is delicious and bursting with flavour. A perfect vegetarian side dish or great for a potluck party!
Ingredients
Recipe serves 8-10
2 broccoli heads (about 4 cups) washed, large stems removed, roughly chopped
1 head cauliflower, washed, stems removed, roughly chopped
3 tbsp avocado oil, divided
1 shallot, chopped
2 garlic cloves, minced
1/4 tsp fresh ginger, grated
4 tbsp vegan butter
3 tbsp flour
2 cups unsweetened coconut milk ( I use Califia brand)
2 cups reserved water from broccoli, cauliflower
1 tsp yellow mustard
2 1/2 tsp salt
1 tsp black pepper
1/4 tsp fresh nutmeg, grated
1 cup dairy-free mozzarella, plus more
1 tbsp nutritional yeast
Preparation
Preheat oven to 400ºF. Oil a 9"x 9" casserole dish with 1 tbsp of avocado oil and set aside.
In a large pot, add broccoli and cauliflower. Cover vegetables with water and bring to a boil. Cook vegetables for approximately 5-7 minutes or until florets have softened, but stems are still al dente. Strain in a colander over a small pot or bowl to reserve 2 cups of water. Set reserved water aside for sauce.
In a medium pan, heat 2 tbsp avocado oil over medium-low heat. Add shallot, garlic, and ginger. Sauté for 2-3 minutes. Add butter and flour to make a rue. Stir continuously for 1-2 minutes. Add the coconut milk and reserved water and continue stirring to remove any clumps until the sauce is smooth. Add mustard, salt, pepper, and nutmeg. Allow the sauce to simmer and thicken for about 4-5 minutes, stirring often. When the sauce is thick and smooth, turn off the heat and add the mozzarella and nutritional yeast. Stir the sauce to combine. Taste and add additional seasonings if desired.
Add the cooked broccoli, cauliflower mix to the sauce and carefully fold into the sauce until fully incorporated.
Pour mixture into the casserole dish and sprinkle additional mozzarella over the top. Bake for 20-25 minutes or until the casserole is golden and bubbly. Once the casserole is ready, remove from the heat and let rest. Allow the casserole to rest for about 20 minutes before digging in.
