When you love beets and hummus you make red beet hummus!
Ingredients
Recipe serves 6-8
2 pre-cooked red beets, chopped in half
1 1/2 jarred or canned chickpeas (about 16 oz), rinsed and drained
4 tbsp freshly squeezed lemon juice
2 garlic cloves, minced
1/4 cup olive oil
1/4 cup water
1/2 tsp ground cumin
1/4 tsp cayenne pepper
a pinch of turmeric powder
salt to taste
(optional) parsley for garnish
Preparation
Put all ingredients in a food processor or blender. Blend until smooth.
Transfer to a bowl, add fresh olive oil and parsley overtop and serve with your favourite veggies or crackers.
