Fresh Red Beet Hummus

When you love beets and hummus you make red beet hummus!

 
 

Ingredients

Recipe serves 6-8

  • 2 pre-cooked red beets, chopped in half

  • 1 1/2 jarred or canned chickpeas (about 16 oz), rinsed and drained

  • 4 tbsp freshly squeezed lemon juice

  • 2 garlic cloves, minced

  • 1/4 cup olive oil

  • 1/4 cup water

  • 1/2 tsp ground cumin

  • 1/4 tsp cayenne pepper

  • a pinch of turmeric powder

  • salt to taste

  • (optional) parsley for garnish

 

Preparation

Put all ingredients in a food processor or blender. Blend until smooth.


Transfer to a bowl, add fresh olive oil and parsley overtop and serve with your favourite veggies or crackers.
