This Morning I made a favourite in our home - my gluten and dairy free baked apple granola! I enjoy topping mine with dairy free yogurt and a sprinkle of cinnamon.
Ingredients:
Recipe serves 4-6
6 apples of your choice, cored & cut into cubes
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp vanilla extract
1 cup maple syrup, divided
1 cup dried cranberries
2 cups sprouted rolled oats
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/4 cup cocoa nibs
1/2 cup coconut oil, melted
a pinch of salt
Preparation:
Preheat oven to 350 degrees Fahrenheit.
In a large bowl - add apples, cinnamon, nutmeg, vanilla extract, 1/2 cup maple syrup, cranberries and toss until combined.
Pour the mixture into an 8x8 baking dish.
In a separate smaller bowl, combine - oats, pumpkin seeds, sunflower seeds, cocoa nibs, the remaining 1/2 cup of maple syrup, coconut oil & salt.
Mix well and pour over apples, covering all the apples.
Bake for 1 hour.
TIP: I put a sheet of parchment paper over the rack above so the crumble doesn't burn.
I like to top this baked apple Granola with Dairy free yogurt
