Healthy Vegetable Salad

This vibrant salad is so nutritious. It is rich in fibre, vitamins, minerals, antioxidants and is bursting with flavour!

 
 

Ingredients

Recipe serves 8-10


Ingredients for salad
  • 3 apples, peeled, cored and cut into cubes

  • 2 packs precooked beets, cut into cubes (reserve beet juice)

  • 1/2 red onion, cubed

  • 1 medium zucchini, cut into cubes

  • 3 carrots, shredded

  • 1/2 cup red radish microgreens

  • 1/4 cup fresh mint, chopped

Ingredients for vinaigrette
  • 1/3 cup reserved beet juice

  • 1/4 cup olive oil

  • 1/4 cup apple cider vinegar

  • 1 tsp maple syrup

  • 1 tsp fresh ginger, grated

  • seasonings- 1/2 tsp salt, 1/4 tsp black pepper, 1/4 tsp garlic powder

 

Preparation


In a large bowl, add the apples, beets, onion, zucchini, and carrots.


In a small mason jar, add all the ingredients for the vinaigrette. Seal the jar with the lid and shake well for about 30 seconds.


Pour vinaigrette over salad, add mint and mix well to combine.


Transfer salad into a large bowl and place microgreens over the top to serve.
