Honey Glazed Roasted Vegetables

My Simple Honey Glazed Roasted Vegetables

 
 

Ingredients

Recipe serves 4-6

  • 4 large heirloom carrots, peeled and chopped into quarters

  • 1 small bag (1 1/2 lbs) of medley potatoes, cubed

  • 4 jerusalem artichokes, peeled and cubed (if not in seasons you can replace with daikon or parsnips)

  • 1 large red onion, peeled and cut into quarters

  • 1/4 cup olive oil

  • 2 tbsp honey

  • 2 tbsp fresh thyme, chopped

  • 1 tsp garlic powder

  • season with salt and pepper to taste

 

Preparation


Pre-heat oven to 400ºF. Line a baking sheet with parchment paper


To a large bowl add all vegetables.


Add olive oil, salt, pepper, garlic powder, and fresh thyme.


Mix vegetables well.


Place vegetables onto baking sheet and cook for 45 minutes or until potatoes are fork tender. Stir the vegetables halfway through cooking.


Once the vegetables are cooked, remove them from the oven and drizzle honey over top, mix the vegetables until evenly coated and serve warm!
