These healthy patties topped with my creamy sauce in a veggie bun are so delicious! They are gluten, and dairy-free.
Ingredients

Ingredients for the patties
1 3/4 cups pre-cooked lentils, or lentils from a can, washed and rinsed
1 small shallot, finely chopped
1 large garlic clove, minced
1 jalapēno pepper, seeds removed and finely chopped
1 tbsp avocado oil plus more
olive oil for brushing
1 1/2 cups of frozen carrots and peas mix, thawed and drained
1 flax egg ( combine 1 tbsp flaxseed meal and 2 1/2 tbsp of water in a bowl, mix and allow to thicken for 5 minutes)
1/2 cup quick oats
herbs - 1/2 cup of fresh basil, parsley and thyme combined
seasonings - 1 1/2 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, 1/2 tsp paprika
avocado, sliced for topping or any toppings of your choice
Ingredients for the portabello buns
16 portobello mushrooms, stems removed
olive oil
pinch each of salt, pepper, and garlic powder
Ingredients for my patty sauce
1/2 cup vegenaise
1 tbsp yellow mustard
2 tbsp relish
1 tbsp ketchup
1 tsp Worcestershire sauce (vegan and gluten-free) I use 'The Wizard' brand
1/2 tsp sriracha sauce
1/4 tsp garlic powder
Preparation
Preheat oven to 400ºF. Generously grease a large baking sheet with avocado oil and set it aside.
In a small pan, heat the avocado oil over medium heat. Add shallot, garlic, and jalapēno. Sauté 2-3 minutes until soft. Set aside.
In a food processor, add all remaining ingredients except the avocado and process until the mixture is blended well. Transfer to a medium bowl and stir in the shallot, garlic, jalapēno mix. With wet hands, form the mixture into eight medium-size patties and place on greased baking sheet. Brush the tops of each pattie with olive oil, about 1 tbsp each.
Bake for 25-30 minutes or until set and golden.
Prepare the portobello buns by placing the mushrooms on a large baking sheet, stem side up. Drizzle each mushroom with olive oil, season with a pinch each of salt, pepper, and garlic powder. Allow baking with the patties for 20-25 minutes. Remove from oven and set aside until the patties have cooked.
In the meantime, prepare the patty sauce by adding all the ingredients into a small bowl. Whisk to combine and set aside in the refrigerator until the burger is ready to assemble.
