Matchstick Salad with Vegan Creamy Dill Dressing

This colourful salad is so refreshing and creamy. I hope it brightens up your day!

 
 

Ingredients

Recipe serves 8-10


Ingredients for salad

  • 1/2 seedless cucumber, cut lengthwise into uniform matchsticks

  • 2 fennel bulbs, halved and cut lengthwise into uniform matchsticks

  • 2 fuji apples (or any apple of your choice), cored and cut lengthwise into uniform matchsticks

  • 6 red radishes, cut into small uniform matchsticks


Ingredients for the creamy dill dressing

  • 1/3 cup vegenaise (vegan mayo)

  • 1/3 cup coconut yogurt (plain)

  • 2 tbsp apple cider vinegar

  • 1 tbsp freshly squeezed lemon juice

  • 1/4 tsp ground celery seeds

  • 1/2 tsp salt plus more if needed

  • 1/4 tsp black pepper

  • 1tbsp fresh dill, chopped

 

Preparation


In a large bowl, add cucumber, fennel, apples, and radishes. Add the creamy dill dressing and mix well to combine all the ingredients.


Add all the dressing ingredients to a medium bowl and whisk until smooth. Taste for seasoning and adjust if desired. Set aside in the refrigerator.
