Mixed Radicchio Salad

This healthy salad is full of fresh ingredients. Great for a summer BBQ!

 
 

Ingredients

Recipe serves 6-8

  • 1 radicchio, thinly sliced

  • 8 radishes, thinly sliced (I used a mandolin)

  • 3 red beets, cut into matchsticks

  • 1 fennel bulb, thinly sliced

  • 1 container arugula sprouts (100g)

  • 1/2 cup sesame seeds

  • 1/2 cup sliced almonds

  • 1/4 cup fresh mint, chopped

  • for the vinaigrette- 1/4 cup apple cider vinegar, 2 tbsp lemon juice, 1/4 cup olive oil, and salt, black pepper, garlic powder, to taste

 

Preparation


In a large bowl, add all the ingredients for the salad.


In a small mason jar, add the ingredients for the vinaigrette and shake well for a minute or so. Pour vinaigrette over the salad and mix to combine.
