Protein Balls

These yummy protein balls are the perfect treat when you are craving a little something sweet! Give them a try.

 
 

Ingredients

Recipe makes 20 protein balls

  • 10 brown rice cakes

  • 1/2 cup almonds

  • 1/2 cup walnuts

  • 1/4 cup pumpkin seeds

  • 1/4 cup hemp hearts

  • 1 scoop vanilla organic plant-based protein powder (I use the Garden of Life brand)

  • 1 cup dates, pitted (about ten dates) and soaked in 1/2 cup of boiling water

  • 1/2 cup preserved date water

  • 1 tsp vanilla

  • 1 tsp cinnamon

  • 1/2 cup molasses

  • desiccated unsweetened coconut

 

Preparation


Remove the seeds from the dates and add them to 1/2 cup of boiled water, allowing them to soak for about 10 minutes.


Pulse well until crumbly, then add the dates and water, vanilla, cinnamon, and molasses.


Blend on high until all the ingredients form a thick, sticky mixture. You may have to stop the mixer, scrape down the sides with a spatula, and continue to blend until uniform.


Transfer the mixture to a bowl. Measure about a tablespoon of batter and roll into a smooth ball (I wet my hands with water for easy rolling).


Add some coconut in a small bowl, coat the balls in the coconut, and give them another roll to allow the coconut to adhere to the balls.


Place the protein balls on a sheet tray and refrigerate them for at least an hour to set and cool.
