Recipe serves 4-6
Ingredients for Salad
1 large zucchini, washed, thinly sliced into ribbons (I used a mandolin to slice all the veggies). Note- you may also use a potato peeler to make thin ribbons
2 carrots, peeled, thinly sliced into ribbons
1/2 large cucumber, peeled, thinly sliced into ribbons
1 bunch of radishes, washed, thinly sliced
2 tbsp fresh oregano, chopped
1/4 cup hemp hearts
Ingredients for Vinaigrette
3 tbsp olive oil
3 tbsp white balsamic vinegar
1 small garlic clove, minced
1/2 tsp grated fresh ginger
1/2 tsp salt
1/4 tsp black pepper
1 tbsp fresh oregano, chopped
Preparation
In a large bowl, add all the ingredients for the salad.
In a mason jar, add all ingredients for the vinaigrette, secure the jar and shake vigorously until the dressing is well combined.
Pour vinaigrette over the salad and mix well to allow the flavours to combine.
