On tonights dinner menu - Roasted Aubergine with a spicy hoisin sauce
Ingredients
Recipe serves 4
2 eggplants, cut in half lengthwise
avocado oil
1/4 cup toasted sesame seeds
1/4 cup fresh parsley, chopped
Ingredients for sauce :
2 tbsp hoisin sauce
1 tbsp smooth almond butter
2 tsp tamari (gluten free soy sauce)
1 tsp maple syrup
3 tbsp water
1/4 tsp cayenne powder (optional)
Preparation
Pre-heat oven to 375ºF. Line baking sheet with parchment paper.
Place eggplant halves on baking sheet, skin side down. Skor the flesh of the eggplant in a crisscross pattern, making sure not to puncture the skin. This helps the eggplant absorb the sauce. Set aside.
In a small bowl, combine all ingredients for sauce and whisk until smooth.
Pour equal amounts of sauce over each eggplant and evenly distribute sauce over top with a pastry brush.
Drizzle avocado oil overtop each eggplant and bake for 30 minutes or until eggplant has softened.
Once eggplant is cooked, sprinkle toasted sesame seeds and freshly chopped parsley on top.
