Vegan Meatloaf and Cauliflower Mash

My vegan meatloaf is packed with flavour. It's full of healthy protein and is truly filling. The cauliflower mash is the perfect accompaniment for this dish.

 
 

Ingredients

Recipes serves 6-8


Ingredients for meatloaf

  • 3 tbsp avocado oil

  • 1 tbsp olive oil

  • 3 cups precooked lentils (or you may use lentils from the can, rinsed and drained)

  • 2 celery stalks, finely chopped

  • 1/2 red bell pepper, chopped into cubes

  • 1 shallot, finely chopped

  • 2 garlic cloves, finely chopped

  • 6 cremini mushrooms, finely chopped

  • 1 cup frozen broccoli, thawed and chopped

  • 3/4 cups walnuts, finely chopped

  • 1 cup gluten free sprouted oats, blended into flour

  • flax egg - 1 tbsp flax seed powder (for flax egg ; mix 1 tbsp flax seed powder in 2 1/2 tbsp water, let sit for 5 minutes until it thickens) then use as an egg replacement

  • seasonings- 1/2 tsp each of salt, black pepper, garlic powder, and paprika

  • 2 tbsp Tamari sauce (gluten free soya sauce)

  • herbs- 1/4 cup each of chopped basil, parsley and thyme

Ingredients for cauliflower mash

  • 1 whole cauliflower, chopped and stem removed

  • 3 garlic cloves, peeled

  • 2 tbsp vegan butter

  • seasonings- 1 tsp salt, 1/4 tsp ground black pepper, 1/4 tsp garlic powder

 

Preparation


Preparation for meat loaf


Preheat oven to 350ºF. Grease a 5x10"loaf pan with 1 tbsp avocado oil, greasing all the sides.


In a medium pan, heat 2 tbsp of avocado oil over medium-low heat. Add celery, red pepper, shallot, garlic, mushrooms, and broccoli. Sauté for 5-7 minutes or until red peppers are soft. Add seasonings to veggies and mix well. Turn off the heat and set it aside.


In a large bowl, add cooked lentils, walnuts, oat flour, flax egg, Tamari sauce and herbs. Mix well to combine. Add the cooked vegetables and mix once again. I like to taste and add more salt if needed.


Place the mixture into the prepared loaf pan, spread it evenly and drizzle 1 tbsp of olive oil over the top. Cover the loaf with parchment paper followed by aluminum foil and bake for 30 minutes. After 30 minutes, uncover the loaf and cook for an additional 20 minutes.


Preparation for cauliflower mash


In a medium pot, add approximately 4 cups of water and bring to a boil. Add the cauliflower, garlic and 1 tsp of salt. Allow cauliflower and garlic to cook for about 10-12 minutes, or when you poke the stem of the cauliflower with a knife, it slides off. Turn off the heat. Drain the cauliflower in a colander and return it to the pot. Add the butter and seasonings and blend with a hand blender until smooth. You can also use a potato masher, but the results may not come out as smooth.
