These moist carrot, zucchini spelt muffins are ready for my 3 pm coffee!
Ingredients
Recipe makes 12 muffins
Dry Ingredients
2 cups sprouted spelt flour
1/2 cup coconut sugar
1/2 cup shredded coconut
1 tsp baking powder
2 tsp baking soda
1/4 tsp salt
2 tsp cinnamon
Wet Ingredients
1/2 cup maple syrup
1/2 cup coconut oil, melted
2 eggs
1/4 cup sesame seed butter
3 cups zucchini and carrots, grated, combined
1 large apple, peeled and grated
1/4 cup hemp hearts
1/4 cup dark chocolate chips
Preparation
Preheat oven to 350 degrees Fahrenheit. Grease and flour a 12 tin muffin pan and set aside.
In a medium bowl, mix all dry ingredients.
In a separate bowl beat eggs, coconut oil, maple syrup and vanilla until light and fluffy.
Add all wet ingredients to dry ingredients and mix with a spatula to combine.
Pour into greased or lined muffin tins. Bake for 20 minutes or until toothpick comes out clean.
I enjoyed these healthy muffins with homemade sweet cinnamon vegan butter.
