Cauliflower is one of my favourite vegetables, this was the first time I cooked it whole and if I do say so myself, it is oh so pretty!
Ingredients
1 whole cauliflower, stem carefully removed, making sure to keep the cauliflower intact
1/4 cup + 1 tbsp avocado oil
1/4 cup water
Dressing
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp black pepper
1 tsp salt
2 tbsp freshly squeezed lemon juice
1 tbsp each of fresh mint, fresh parsley, fresh thyme, finely chopped
Preparation
Pre-heat oven to 350ºF
Grease a 9"x 9" casserole dish with 1 tbsp of avocado oil.
Place the cauliflower stem side down into the dish.
In a small bowl add all ingredients for the dressing, mix well to combine.
Using a pastry brush, I like to brush the dressing all over the cauliflower until it is fully dressed.
Pour water into the dish and bake for 45 minutes.
At this point, remove the cauliflower and baste it or brush it with its own juices. Continue cooking for an additional 40 minutes or until you can insert a knife easily through the cavity of the cauliflower.
When the cauliflower is cooked through, remove from oven and sprinkle extra salt, paprika and black pepper overtop.
